A little bit about this recipe…..

I have always just bought tins of refried beans, but a few days ago I realised I didn’t have any, so I thought I would try making my own. These are traditionally made with pinto beans…but I didn’t have any of those either so I used kidney beans.
Ingredients
- 1 tin kidney beans (you could use pinto, black or really any type you have)
- 1 onion finely chopped
- 3 cloves of garlic or 1 tbsp garlic paste
- 1 chilli finely chopped (I used 3 as we like a bit of kick)
- 1 tsp cumin seeds
- 1/2 tsp dried oregano
- 1/2 tsp paprika
Method
- Place the beans in a bowl with half of the liquid (from the tin)
- Blitz with a hand blender until smooth or use a potato masher
- Heat 1 tbsp of oil in a pan
- Add onion and cook until soft
- Add garlic, chilli and cumin seeds. Cook until this sizzles
- Add the beans, paprika and oregano
- Cook until heated through. You can add a little more of of the liquid from the tin if you think it’s too thick
