A little bit about this recipe…..

This sauce is very simple and quick to make. Years ago I would have just bought a jar. However, these days I like to know exactly what goes into our meals. I can also adjust ingredients depending on who I am feeding.
Ingredients
- 1 onion finely chopped
- 3 garlic cloves crushed or 1tbsp garlic paste
- 1/2 red pepper (optional)
- 1 grated carrot (optional)
- Splash white wine (optional)
- 1 tin chopped tomatoes
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1 tsp chilli powder
- 1 tsp oregano
- 1 tbsp brown sugar
- 1 tbsp cider vinegar
Method
- Heat 1 tbsp of oil in a pan on medium heat
- Cook onion until soft
- Add garlic and carrot and pepper if using
- Once cooked add all spices and cook for minute
- Add brown sugar and vinegar
- Pour in tomatoes
- Simmer until reduced
- Once sauce has reduced, blitz with a hand blender
- Season with salt and pepper

- When I make this sauce I generally do double the quantity and freeze what I don’t need.
