Enchilada Sauce

A little bit about this recipe…..

This sauce is very simple and quick to make. Years ago I would have just bought a jar. However, these days I like to know exactly what goes into our meals. I can also adjust ingredients depending on who I am feeding.

Ingredients

  • 1 onion finely chopped
  • 3 garlic cloves crushed or 1tbsp garlic paste
  • 1/2 red pepper (optional)
  • 1 grated carrot (optional)
  • Splash white wine (optional)
  • 1 tin chopped tomatoes
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • 1 tsp chilli powder
  • 1 tsp oregano
  • 1 tbsp brown sugar
  • 1 tbsp cider vinegar

Method

  1. Heat 1 tbsp of oil in a pan on medium heat
  2. Cook onion until soft
  3. Add garlic and carrot and pepper if using
  4. Once cooked add all spices and cook for minute
  5. Add brown sugar and vinegar
  6. Pour in tomatoes
  7. Simmer until reduced
  8. Once sauce has reduced, blitz with a hand blender
  9. Season with salt and pepper

  • When I make this sauce I generally do double the quantity and freeze what I don’t need.
