A little bit about this recipe…..

This recipe came about because Paps went to Lidl alone and came back with two tubs of herb cream cheese. So I needed to come up with something.
Ingredients
- 1 onion finely chopped
- 1 courgette roughly chopped
- 1 red pepper chopped
- 2 red chilli chopped (optional)
- 4 asparagus spears chopped
- Spagetti
- 200 g raw king prawns
- 200 g cream cheese with herbs
- Grated parmesan cheese to serve (optional)
Method
- Bring a pan of water to boil and add spaghetti
- While spaghetti is cooking, melt a large knob of butter in a pan
- Once melted add onion and cook until just soft
- Add garlic and chilli if using and cook for 1 minute
- Add pepper, asparagus and courgette
- When vegetables are just soft stir in cream cheese
- Stir until cheese has completely melted
- Add prawns and cook until pink
- Drain spaghetti and stir into the sauce
- Once plated, sprinkle with parmesan
Blags, Tips & Tricks
- You could substitute prawns for cooked chicken, beef ham etc or it would make a really good vegetarian option.
