A little bit about this recipe…..

This recipe is very easy and full of flavour
Ingredients
- 1 onion finely chopped
- 2 red pepper chopped into pieces
- 2 garlic cloves crushed
- 1 or 2 red chilli finely chopped (optional)
- 1 tsp smoked paprika
- 500 ml chicken stock
- 1 tbsp tomato puree
- 300g baby potatoes quartered
- 180g raw king prawns
Method
- Heat a little oil in a pan
- Once hot add the chopped onion and cook until soft
- Add garlic, peppers and chilli if using
- Cook for a few minutes
- Stir in paprika for about a minute
- Add stock and puree bring to simmer
- Add potatoes and cook until tender
- Finally add prawns and cook until pink
- Serve with a selection of green veg, I used broccoli

- I think this would work just as well with chicken
