Hi everyone – hope you had a great weekend.
It’s Monday, and I’m staring into the fridge at a random collection of bits and pieces: some leftover roast chicken, a chunk of ham, a few cooked sausage pieces, a handful of cherry tomatoes, half a bag of spinach, and some mozzarella cubes.
Not exactly a plan… more of a situation.
So what do you do?
Risotto. That’s what.
Now, I’ve added the recipe I used below, but this is definitely more of a guide than a strict recipe. The beauty of something like this is that you can throw in whatever you’ve got lying around.
In mine, I added some green chillies for a bit of heat – but if you’re cooking for the kids, you’d probably leave those out (or tone things down a bit).
That’s the whole point of this one – use what you’ve got, make it your own, and it’ll still turn out great.
I have to say… this one was absolutely banging.
