As usual, the family decided they’d all like to get together for Mother’s Day… and that I should cook!
But this year I had some help from the lovely Caroline (mum of my daughter’s boyfriend). She turned up with a whole spread – salmon & cream cheese twirls, crudités & hummus, and some absolutely delicious honey and mustard sausages.
As you can see from the picture, Caroline seems to have the same “portion control” approach as me… because this is what was left after 8 adults and 3 children had tucked in.
Not wanting to waste anything, I bagged it all up and put it in the freezer while I had a think about what to do with it.
Fast forward to yesterday… and I had the beginnings of a plan.
Or, more accurately:
This is full-on “blag it and see what happens” cooking.
I pulled everything together, added a few bits from the fridge, and hoped for the best.
The result?
A really, really tasty plate of food.
Definitely one I’m going to keep.
I’ve added the recipe below if you fancy giving it a go – but as always, this is more of a guide than a strict recipe, so feel free to use whatever you’ve got lying around.
