I mentioned in a previous post that I was cooking roast lamb and as I expected, I had loads of lamb leftover and roasted veg! As per bloody usual, still cooking for 6….. but what am I supposed to do when Paps goes bargain hunting?
So, not wanting to waste the lamb, the veggies and the gravy……. I am going to do a roast lamb pie with roasted vegetable topping.
I won’t bother giving a recipe as it really is just a case of chuck it all together.
Either mince or chop the lamb and mix in any roast veg such as peas, sprouts and green beans – bung in an oven dish and stir in the left over gravy. Then just mash or blitz all roast pots and veg and cover lamb. That’s it – a full meal created from a meal you have already had – So surely that makes it free! BONUS!!!!!
One final thing…. when you do a roast any type, never chuck the bones away – you will get the best stock. If you don’t want to do stock at this point pop them into a bag , put them in the freezer and save for when you have more bones.
