Roast Lamb Shoulder

Now, this doesn’t sound too ‘budget’ – but in my defence, Paps bought a couple of these from Tesco when they were half price and bunged them in the freezer. So I got a 2.1 kilo joint for £14! Anyway, I am going to do this with some roasted carrots & parsnips that I have lying about, some sprouts with bacon and garlic (that I got in a veg box from Lidl along with some homemade gravy.

I won’t bang on about cooking a roast but one thing I would mention…..If you can, get yourself a meat thermometer. I always thought these were a complete waste of time but Paps bought one a few months ago from Temu for a fiver. I don’t know about you but I have a tendency to overcook joints of meat (especially chicken) as I am always terrified of murdering my family by poisoning! The thermometer changes all that – basically, when it gets to the right temperature, its done (you can get all the temperature details online). We cooked a chicken the other day using this and quite apart from cutting the recommended cooking time by 20 mins (saving lecky), it was fabulous!

We are going to have a lot of leftover lamb, so I will post what I am going to do with it in the next couple of days.
