Prawn Blaghetti

Paps went to the shops unaided again.

Now, regular readers will know that this is always a slightly risky undertaking. He does take a shopping list with him, but somehow manages to return with a selection of bonus ingredients that nobody asked for.

This week’s mystery purchase? Two cartons of herb soft cheese.

Not one.

Two.

So there I was, staring at them and wondering what on earth to do next.

This called for a high-level blag.

The result was Prawn Blaghetti – and I have to say, it was absolutely delicious. Creamy, garlicky, comforting and surprisingly quick to make.

The best thing about this recipe is that it’s incredibly flexible. The prawns worked beautifully, but you could easily swap them for chicken, beef, ham or pretty much anything else you happen to have lurking in the fridge.

It would also make a fantastic vegetarian meal and is one of those recipes that tastes far more impressive than the amount of effort required.
