Standard Sunday Chaos

You know those weekends that don’t quite go to plan?

Yesterday brought some not-so-great news which completely knocked my day sideways. All the things I’d hoped to tick off… remain very much unticked.

Roll on Sunday.

Two of my three Gremmos are already here. The third is arriving later with parents in tow. There’s apparently some very important football match happening this afternoon. I have absolutely nothing prepared, nothing defrosted, and very little in the fridge because tomorrow is shopping day.

This calls for a trusted favourite…………Corned beef hash.

Now – I’ll be honest – I’ve never really been a huge fan of corned beef on its own. But this particular version was cooked for a whole gang of us on a skiing trip in France many years ago, and it completely converted me.

It’s simple.
It’s cheap.
It’s quick.
It feeds many.
And it freezes beautifully.

Exactly what a chaotic Sunday needs.
