Ok……so this is what happened: The family decided they would like to have breakfast at Jam Jams. We were looking at us, our 3 daughters + partners and 3 grandchildren (Gremmos) so 11 in total. I tried to swerve them into having something simple (croissants, toast, brioche etc.) but that didn’t work…they wanted a full English! Sent Paps off to get the supplies.
So, trying to make sure that everyone wasn’t hanging around, I cooked…..20 sausages, 4 packs of bacon, a large tub of mushrooms, 3 tins of baked beans, 2 tins of plum tomatoes, a packet of hash browns and a load of fried bread. All good and feeling very smug. (the eggs I did when they arrived).
Breakfast went very well and was really fun – one slight issue – 2 adults and 3 Gremmos couldn’t make it due to a bug caught at school! So now I have a whole load of leftovers…what to do?

First thing – I had 4 slices of uneaten toast. Blitzed them, bagged them and put in the freezer for future ‘toasted breadcrumb’ creations.
Here is what I did with everything else…chopped the bacon rashers into small pieces and then put the whole lot into the slow cooker. I then added some chopped carrot, sliced red pepper and 500ml of chicken stock. Give it a couple of twists of salt and pepper and put it on low.
The result was super…a really tasty sausage casserole which I did with ‘second-hand’ mash (mash I had saved in the freezer when I had previously made too much). This used up all of my leftovers – so very pleased with that. I had a fair amount of the casserole sauce leftover (no sausages – thanks Paps). This went into the freezer – I will use that as a sauce for something else or simply cook off some more sausages and add them together.
Now that’s how to Blag!!!!!
I have added my ‘normal’ sausage casserole recipe for you……as not everyone over cooks on quite such a huge scale!!!!!!
