Sausage Casserole

A little bit about this recipe…..

This is a great recipe that you can prep in advance and pop in slow cooker or oven.

Ingredients

  • 10/12 sausages (Depending how hungry everyone is.)
  • 1 large onion – sliced
  • 4 carrots – sliced
  • 1 red pepper – sliced
  • Mushrooms – chopped (optional)
  • 6 bacon rashers (optional – but I think it adds extra flavour)
  • 2 tins chopped tomatoes
  • 500ml stock (chicken or beef)
  • 1 tin baked beans (optional)

Method

  1. Put a splash of oil in a pan. Once its hot, add your sausages and brown off. Remove from pan and put in casserole dish with lid or slow cooker.
  2. Add another splash of oil to the pan. Cook onions until softened. Remove and add to sausages.
  3. Now cook off your bacon. When the bacon is almost cooked add a knob of butter. Add your mushrooms and cook for a couple of minutes. Place bacon and mushrooms into your casserole.
  4. Finally throw in your tinned tomatoes, baked beans (if using) and your stock. Season with salt and pepper.
  5. If you are are using a slow cooker you can either put on high or low, depending on how soon you want to eat.
  6. If you are putting oven, heat oven to 180°C and cook for about 1 hour.
  7. I normally serve with mashed potatoes.

Blags, Tips & Tricks

  • As with many of the recipes I do, I tend to use bacon misshapes. These are a much cheaper way to buy bacon and are just as good. I normally buy these in Home Bargains or Lidl. Give it a go.
  • You will usually end up with some casserole sauce leftover. This freezes well and can either be used for the ‘same again’ and simply add more sausages or use it as a pasta sauce etc.
